Makes 12 Small Scrolls

1.5 cups SR Flour (or 1.5 Plain Flour + 3 tsp Baking Powder)
1 cup Natural Yoghurt
1 tbsp Melted Butter
Fillings
Apple + Sultana
1 Apple diced (around 3/4 cup)
1/4 cup Sultanas
1 Tbsp Caster Sugar (Can use brown or whatever you have)
1 Tbsp Ground Cinnamon
1 Tbsp melted Butter (about 20g)
Cinnamon
1 Tbsp Caster Sugar (Can use brown or whatever you have)
1 Tbsp Ground Cinnamon
1 Tbsp melted Butter (about 20g)
Nutella
I don't think this one needs an explanation, except there is no butter added.
Icing
1/2 Cup Icing sugar
1 tsp Melted Butter
2 tsp Milk
1/2 tsp Vanilla
Method
Preheat your oven to 190°c.
For the Dough - Use a spoon to combine all the ingredients in a bowl till it all comes together. I then use my hand to knead it for a minute till it becomes smooth, this almost allows me to see how sticky it is and if needs a little more flour. Feel free to use a stand mixer, but it's honestly so easy!
Place the dough between 2 sheets of baking paper, dust a little flour over it and roll it into a rectangle. It should be about 3-5 mm thick. Remove the top layer of paper but leave the bottom as it will help when it's time to roll.
For the filling (Apple, Cinnamon, Sultana) - spread over the melted butter, then (you don't have to) mix the sugar and cinnamon together in a bowl and evenly sprinkle it all over. If you feel like there isn't enough you can add more. Sprinkle over the apple pieces and sultanas.
To roll, make sure the long side is in front on you and roll it into a log. To get 12 even pieces cut it half, then those half and so on.
Place the scrolls in a tray, I use a glass one as I like to be able to look under while they're cooking to check if they've cooked from underneath. Keep a 2cm gap between the scrolls and give them a light press.
Put them in the oven and let them cook for 25 - 30 minutes. They should be golden brown and cooked from top to bottom.
To make the icing, add the ingredients to a bowl and use a whisk to combine till smooth - this took me about 30 seconds of painful arm whisking.
Let the scrolls cool a little before drizzling over the icing, this way it holds its shape instead of just melting and disappearing into the tray.
These are best eaten warm.
Enjoy x
My Tip: The toppings are endless, why not make them savoury. You can substitute the butter for oil or nothing at all.
