Bean Salad


Ingredients

1 400g can of 4 Bean mix (or beans of your choice)

1/4 Red Onion

1 Lebanese Cucumber

1 Sweet Red Pepper/Capsicum

Basil Leaves

Balsamic Vinegar

Red Wine Vinegar

Extra Virgin Olive Oil

Salt


Method

Rinse and drain the beans and add them to your serving bowl.


Finely Slice the Cucumber, Onion and Capsicum and add them to bowl with some torn basil, a sprinkle of salt, a generous splash of oil and both vinegars.


Combine the salad and serve.


My Tip: Crumble in some Feta for a creamy texture.


Change up the ingredients depending on what you have and what you like. Just keep a base of beans, onion, oil + vinegar and the rest is up to you.
