Apple Nut Baklava

Makes 1 large tray 32 x 25cm

Ingredients

1 Pk 375g Fillo Pastry

120g Unsalted Butter


Filling

100g Walnuts

100g Pecans

40g Raw Sugar

Zest of 1 Orange

2 Apples


Syrup

40g Raw Sugar

60g Water

60g Fresh Orange Juice




Method

Preheat your oven to 190°c.


In a food processor add the nuts and pulse a few times to get a coarse crumb, don't be bothered if there are chunkier bits.


Add them to a mixing bowl as well as the orange zest and sugar.


Then peel and chop the apples into little cubes and add them to the bowl. Give everything a mix till combined.


Melt the butter and brush the tray, then begin layering your filo and buttering each sheet as you go.


Because of the size of my tray I was able to use 1 sheet for 2 layers, I just folded it in half, you can cut yours if that works better for you.


You want about 10 layers (5 sheets cut in half) on the base, then spread out half of the apple and nut mixture and add another 10 buttered sheets, the remaining mixture and another 10 for the top.


Before your baklava goes in the oven you can cut a design into it. the easiest is to cut 3 or 4 strips and then diagonal cuts to make diamonds.


Now into the oven it goes for 20 minutes, then turn your heat down to 150°c and cook it for a further 30 minutes.


While it's cooking make your syrup, in a saucepan add the sugar, water and juice and cook for about 15 minutes on low. You will have a sticky but runny syrup.


Once the baklava is ready drizzle your hot syrup over it and let it rest and cool.
