Ingredients
3 Large Carrots 2 Eggs 2 Apples 1/2 Cup Sultanas 1 Cup Walnuts 2 Tablespoons Raw Sugar 1.5 Cups Self Raising Flour 1 Tsp Baking Soda 1 Cup Milk 1/2 Cup Oil Pinch Of Salt 1 Teaspoon Of Cinnamon
Method
Preheat your oven to 200c In a food processor add the carrots and apples and blitz into small pieces, add the walnuts and sultanas and continue for a few more seconds. Add in the eggs, milk, oil, cinnamon, sugar and salt and mix till combined, then add in the flour and baking soda.
Pour the mixture into 2 greased tins and into the oven for 20 minutes. If you use 1 tin then aim for about 30 - 40 minutes, but always check with a skewer.
My Tip: I covered mine with a cream cheese frosting. I blended 250g cream cheese, 50g butter, 1/2 cup of icing sugar, the juice and zest of half a lime + a few drops of vanilla.
