Apple + Berry Crumble


Ingredients

500g Apples Handful Of Blueberries (Fresh or Frozen) Agave or Maple Syrup Raw Sugar 1/2 Cup Of Dried Oats 1/4 Cup Of Spelt Flour (Or Your Choice Of Flour) 1/2 Tsp Baking Powder Coconut Oil Cinnamon 1/2 Tsp Vanilla Water


Method Preheat your oven to 200c / 390f.

Peel and cut the apples into little cubes.

Add them to a saucepan with a teaspoon of coconut oil, the blueberries, vanilla, 1 tsp raw sugar, 2 tablespoons of water and a pinch of cinnamon. (If you want the end result to be very saucy add a little more water).


Mix and cover with a lid, checking and stirring every few minutes.

The fruit will take about 10 minutes to cook on medium heat, you want the apples to be soft but still hold their shape. In a bowl combine you flour, oats, baking powder, 1 tsp raw sugar, 2 tsp agave/maple syrup, 2 tbsp of coconut oil and a pinch of cinnamon. You want to mix this with your hands, and be able to press the mixture together and most of it hold. If its too dry add a little more coconut oil.

Place the fruit in a dish or in individual muffin cases. Cover with the crumble mixture and place in the oven, uncovered for 20 minutes until golden brown.

Best served warm with vanilla ice cream but just as good when cooled.
